4/3/20 and 4/6/20 -- Quarantine Day 15 and 18
Mom made Reuben sandwiches for dinner tonight. At first I was hesitant as I did not think I would like sauerkraut. Turns out, I like it! The mango pictured here was super good too!

I am a big leftovers person. My fridge is always full of leftovers as my sisters and I don't normally eat regular breakfast foods. Beginning in 6th grade, I would always bring leftovers from dinner to eat during lunch at school. My friends always wondered why my lunches were always so elaborate haha. My mom often uses leftovers to make dinners too. We had so much corned beef leftover from the Reuben sandwiches that she made corned beef hash with fried eggs. It was a new dish she decided to try, and she just whipped it up, no recipe needed.

Then there was some of that leftover, so I heated it up in a pan with a fried egg and cheese -- quite a yummy breakfast. Honestly, anything with potatoes and cheese is a good time for me.

All three ways of using the corned beef was delicious, and now I know I would be happy at a St. Patrick's Day parade! I also now know that I would enjoy sauerkraut in Germany if I ever get to visit. Unfortunately, my summer abroad Freshman Global Lab trip to Germany for two weeks this summer got canceled because of Coronavirus. I will definitely make it over there though!
